Description
Plank cooking originated with the American Indians, both in the Pacific Northwest and the Atlantic coast areas of the Northeast. Fish would be bound onto alder, maple or cedar boards, then toasted vertically, downwind from a bonfire. Legend has it that this tasty preparation of local seafood had healing powers.
