- 2 chicken breasts skinned, boned and cut into 1" cubes
- 1 bunch of green onions (scallions) cut into 1" lengths
YAKATORI SAUCE
- 1 Tbs peanut oil
- 1 Tbs sesame seeds
- 1/2 cup soy sauce
- 2 Tbs light brown sugar
- 2 Tbs mirin or dry white sherry
Mix the peanut oil, sesame seeds, soy sauce, sugar and mirin in a one quart saucepan and bring to a boil. Cook for about 2 minutes or until the liquid thickens. Let cool. Marinate the chicken for at least one hour in the cooled sauce. Place the chicken in the shaker basket over a medium hot fire and grill for about two minutes, shaking the basket once or twice. Add the onions and asparagus and grill for another 4 to 7 minutes shaking the basket several times. During the last minutes, brush the chicken and vegetables with the yaitori sauce.
