These alder wood chips are great for grilling, barbecuing and smoking meats such as salmon and other delicate meats. They originate in the Pacific Northwest area of the United States and impart a unique and tasty flavor to meats. Like other smoking chips, they are easy to use. Simply soak the wood chips in water for an hour and then they are ready to go! Sprinkle them on the lava rocks, crumple them in aluminum foil or place them in a cast iron smoker box. Either way, they work just great and give a great flavor. If you have not tried Alder, then you have missed a whole segment of the United States and some great cooking flavor.
